Ingredients
1 Lobster, uncooked, cleaned, thinly sliced and chilled in the refrigerator
1 tablespoon Gochujang
1 tablespoon reserved Kimchi liquid
2 tablespoons cold water
1/3 cup grapeseed oil
¼ teaspoon white sugar
½ lime, juiced
4 small Parilla leaves
o 1x tablespoons micro-shiso
o 1 tablespoon baby round mint
o ¼ teaspoon toasted sesame
o 1x green shallot, thinly sliced
Sashimi Lobster
Place a serving plate into the freezer.
To make dressing combine, gochujang, kimchi liquid, white sugar and lime juice. Sit until sugar is dissolved. Pour in grapeseed oil and leave separated.
On a chilled serving plate, lay thinly sliced lobster.
To serve, drizzle over dressing, and garnish with micro-herbs, sesame and shallots.
