Tuna & Kingfish Sushi Wraps
Using scissors carefully cut each nori sheet from the centre of one outer edge to the centre point of the sheet.
Imagining there are 4 distinct squares to each sheet of nori begin laying out ingredients. In the first quarter, beside the cut section of the nori sheet, squeeze 1/2tbsp of kewpie mayo.
In the second quarter lay out ¼ cup of cooked sushi rice.
In the third quarter ¼ of an avocado and top with red onion.
In the final quarter place 25gms of tuna or kingfish.
Fold the first quarter over the second quarter, fold these over the 3rd quarter and again over the 4th. Serve as a square or cut into 2 triangles.
Repeat with remaining nori sheets and ingredients.
Serve with soy sauce for dipping and a sprinkle of shichimi togarashi for spice.
