South Australian John Dory (Zeus faber) is wild caught in the pristine waters of the Southern Ocean and unloaded in Port Lincoln. Dark round marking on its side is said to be the thumbprint left when the fish was picked up by St Peter. John Dory has white delicate fillets that are mild in flavour. John Dory can be crumbed, shallow pan fried, deep fried, oven baked or grilled. John Dory is filleted fresh, packed and frozen all on the same day.
